Nature's Multivitamin: Liver Pills

Can you guess what the most nutrient-dense food on the planet is? I mean THE MOST nutrient-dense food of all time!? Like the-most-nutrition-packed-into-the-smallest-space?!?! Well, you probably guessed either cod liver oil or liver -- and then you probably looked at the picture and guessed liver! ;) Not spinach, not kale, not cacao, not even eggs yolks... Or any of the other "superfoods" you have heard people talking about. And I know that might come as a surprise, But it's true! Here is how to make your own homemade multivitamin and save tons of money in the process and get way better nutrition at the same time! Liver runs about $4/lb at local farmers markets. These wonderful little frozen liver pills are completely tasteless. I have learned to love the ritual of swallowing them several times a day. It's really quite fun!
1 lb of grass-fed, grass-finished beef liver, frozen 14 days and then defrosted for 1-2 days in the refrigerator
a sharp knife
a cutting board
2 baking sheets
2 pieces of parchment paper
a freezer :)
Make sure your liver has been frozen at least two weeks from the processing date, this ensures that any harmful bacteria dies first. (The liver from Deer Run Farm comes frozen so you can skip this part if you get it from them.:) Let the liver defrost slowly in the refrigerator on a plate for 1 -2 days. When its thawed, take it out and chop it up in small pieces.
I can swallow pretty big chunks, but cut it whatever size you can manage to swallow. :) Spread all the pieces out on a parchment lined baking sheet. Make sure they are not touching. Put the whole sheet in the freezer for a few hours. When frozen, gather them all up and put in a small container. Place it in an easily accessible place in your freezer (I keep mine right in the door). I swallow about 4 or 5 with every meal! And my toddler even LOVES to eat these. LOL. YUM!! :D
Keeps frozen several months.
