Coconut Cookie Dough Bites

After my two mile swim this morning, I just wanted to eat yummy, rich cookie dough. I wanted something salty and sweet and "caramely," and these we the PERFECT post-workout refuel!! These have only 5 ingredients and high in healthy energy-giving and metabolism-boosting MTCs!! No added sugars or sweeteners. Only good ol' fashioned dates with tons of vitamins, minerals, and potassium -plus the pink salt make it a win for electrolyte replenishment!


16 pitted dates

1/8-1/4 teaspoon of pink salt (depending on how "salted" you like the caramel flavor ;)

1 tablespoon of vanilla extract

3/4 cup of loose chunks* of coconut butter

3/4 cup of shredded coconut or coconut chips

Blend all the ingredients together in a food processor. Roll into balls with the palms of your hands. You can also roll the balls in extra coconut to keep from sticking together!

*Coconut Butter is solid at room temperature in the winter, so it breaks apart in "chunks" :)
