Fat Bombs!

Hungry? Eat a fat bomb. Snacky? Eat a Fat bomb. Need Dessert? Eat a fat bomb. Need to nibble while you cook? Eat a fat bomb. Need to lick a bowl full of chocolaty goodness? Make these fat bombs. :D

No, seriously. They are crazy filling. And good! Just like what they sound like. A bomb of flavor. Fat flavor!!

These are loaded with healthy fats including coconut oil, cacao butter, and grass-fed butter!


Coconut oil and butter are definitely super-foods!! According to Sally Fallon's Nourishing Traditions Baby book:

"This wonderful fat [coconut oil] will strengthen your immune system and protect you against infection, will give you plenty of energy without causing unwanted weight gain, will nourish healthy bacteria in the colon, and may even contribute to the optimal development of your baby's brain and nervous system."

"Butter is the queen of fats, especially when it comes from grass-fed cows. Grass-fed butter will be a rich source of vitamins A, D, K2, and E -- needed for the development of body and brain --as well as selenium, copper, sinc, and chromium. . . . Most importantly, butter provides arachidonic acid (AA), an under-appreciated type of fat that is essential for healthy skin, intestinal integrity and brain function. The many roles of AA include . . . formation of the cell-to-cell junctions essential to skin and intestinal health; and support of the immune response and the resolution of inflammation. It is essential to fertility and blood clotting. The principal sign of AA deficiency is dry, scaly skin."

So these proportions are general guidelines. You can increase or decrease ingredients to taste! Like lots of dark chocolate? Err on the side of a heaping 3/4c. of the cacao paste chunks! Like more butter? Go for 4 Tbs! Like more sweet? Go for more monk fruit! Play around with it and find what makes your taste buds sing!

RECIPE:

1/2 c. coconut butter or coconut cream concentrate - I LOVE the Tropical Traditions one!

1/3 -1/2 c. virgin coconut oil - this is what I get

1/2 - 3/4 c. raw cacao paste chunks- this one is my fav!

1/3 c. sunflower seed butter - I got the unsweetened from Trader Joe's

3 Tbs. grass-fed butter -I used Kerrygold, (you can substitute grass-fed ghee for dairy-free!)

1/2 tsp. pink salt

1 tsp. vanilla extract

2-3 Tbs. monk fruit sweetener - this is what I used

Melt the first 3 ingredients in a saucepan on LOW heat. Really low. Don't kill the enzymes in the raw chocolate. Stir frequently and keep melting until everything starts to incorporate.



Add the remaining ingredients. Stir until smooth. Use a whisk if you need to get the last of the lumps. When everything is smooth and creamy, pour into a PARCHMENT-lined 8x8 pan. Don't skip the parchment paper. It won't make you happy. :)

Option 2: pour into individual paper cups - like "Reeces' cups" and place on a cookie sheet to put into the freezer.


Put in the freezer for 20-30 min or until firmly set. (The individual cups will take less time)


When the fat bombs are solid, cut into squares. Or things that resemble pieces that you can pick up and eat. ;)

Store in an airtight container in the refrigerator and eat liberally. :D


YUM! I eat these with my morning bulletproof matcha. I snack on them throughout the day and I sometimes even finish the day with one for dessert!
