Banana Pancakes: kid-friendly real food!



Feeding kids can be really hard. Just when you think you know what they like, they change their mind. As a mom who does her best to feed her kids nutrient-dense real food, you find those easy recipes that you KNOW they are sure to love and you go back to them over and over and over again. THIS is one of those recipes for us. I make them for dinner on Sundays and then give the leftovers to them to them as snacks or for a quick breakfast throughout the week! My kids love to eat them cold straight out of the fridge!


These pancakes are gluten-free, dairy-free, paleo, real food, and kid-approved! Yay!!


Let them top it with extra butter - those fat-soluble vitamins are SO GOOD FOR THEM!! :D

 

Banana Pancakes Recipe


1 ripe banana

3 pasture-raised eggs, I get mine from local farms

3 Tbs cassava flour

1 Tbs gelatin

1/2 tsp. vanilla extract

pinch of pink salt

pinch of cinnamon (optional)


1/2 cup ghee, lard, or coconut oil for frying


raw honey for drizzling!

grass-fed butter for topping!


I like to double the recipe ;)

Recipe Directions :)


Add all the ingredients to a 4-cup glass measuring cup. Using a hand-held blender, blend all the ingredients until smooth and no lumps are left. Pre-heat a cast-iron skillet to medium heat with a couple spoonfuls of fat in the skillet. Pour the batter and cook until golden brown on both sides! Don't forget to keep adding more fat to the skillet in between batches! :)


Serve with a drizzle of raw honey and loads of extra butter!


I hope your kids enjoy this recipe as much as mine do!! It's a great balance of fat, proteins, and carbs for little growing bodies. My two-year old wakes up every morning and first thing out of his mouth is "pa-cake!"


These keep really well in the refrigerator. Just put them in an airtight container in the refrigerator and you'll have no-fuss snacks all week!!
